Dutch biscuit mould trivia

The oldest known koek plank (biscuit mould) in the Netherlands dates from the 17th century. 

The most used wood varieties are walnut, ash or teak. They are preferred because  they are easy to work with, their density and firmness. 

The medium speculaas plank is a 'Poldermolen'. The poldermolen is similar to a gemaal. This mill pumps the water from a lower to a higher point.
The large speculaas plank is a 'Wipmolen'. A wipmolen is similar to a hollow post mill and is used for drainage.
