A coarse, hard, opaque white sugar used for decorating. It does not melt when baked making it the perfect finishing touch when baking goods.

Dutch sugar trivia

Other words for hail sugar are nib sugar or pearl sugar. In Dutch we say parel suiker, hagel suiker or grein suiker. 

Examples of where this sugar is used: Dutch cinnamon buns, Christmas ring biscuits (kerst kransjes),  Christmas stollen (kerst stol), and decoration of other biscuits. 

Pearl sugar is made by boiling sugar syrup and letting it cool down again. Then again it will be heated up and small drips are dropped on big cooling plates resulting in   hard and crispy nibs.
